Only 2 more month, than again the olive harvest will start. After a lot of winter rainfalls we expect plenty of fruits in 2015.

This is how traditionally the Cypriot green olives, the “Cakistes” are made. Every single olive is crashed by a stone (to crush = cakmak in Turkish, there the name comes from). After crushing you wash the olives for one week, before you store them in salty water. To find out the right salt concentration, a raw egg must float in the liquid!
